It’s the day after Christmas and our fridge is full. It’s never this full. I don’t think we know what to do with all of this. We have been total gluttons for the past three days. Angry Husband’s grandparents were town so we had more people at our table than usual. It’s always my parents and us. We (I) had to plan to full meals for Christmas Eve and Christmas Day.
For Christmas Eve (Angry Husband’s Birthday), I made Pioneer Woman’s “The Best Lasagna Ever“. I served it with a simple salad (ok, it was the pre-packaged kind). I forgot to make the bread, oh well. But it was a hit. Angry Husband’s grandma raved about it. She liked it so much, she went on Amazon and ordered the cookbook. We finished the dinner off with a pumpkin cheesecake purchased from the local grocery store. Angry Toddler was asleep throughout the entire meal, he missed out.
On Christmas Day, we served turkey. My mom was ranting about this damn turkey since Thanksgiving. We were supposed to have it then, but I told her we were way too busy to un-thaw it, etc. She told me how she took it out of the freezer last Sunday, etc. etc. etc. I really didn’t care. I just told her to bring it over on Christmas Eve. She came over with the turkey and shoved it into our fridge. The funny thing was, we (Angry Husband and I) had never cooked a turkey before, ever. We used our little friend, the Internet to help us. I had visions of all those holiday movies with the overdone turkey.
Luckily, we survived the turkey cooking. We even managed to stuff it, with the box o’ stuffing that I pre-purchased. We served the turkey with vegetables, rolls, and of course, Pioneer Woman’s Delicious Cream, Mashed Potatoes. Everything was delightful. This was also our first time making her mashed potatoes, yum! We finished this meal off with a Tollhouse Pie, made by a family friend.
Just typing this makes me hungry. I’ve eaten enough turkey for a lifetime, and the sugary sweets are coming out of my ears. It was a nice break to be at work today. I had some alone time, away from food and family. Shhh, I can’t wait to go back tomorrow either. What did you have to eat for the Holidays?
